Guten Free, Dairy Free Dinner - Pot Roast
I made pot roast a week or two ago and it was delicious! I decided it would become a regular in our GF/DF testing period.
I started with a recipe from Gluten-Free on a Shoestring.
First I chopped an onion and pressed 2 Tablespoons of fresh garlic. I sauteed them in 4 T. olive oil about 5 minutes then stirred in 1 Tablespoon chili powder and 1 Tablespoon cumin. Then I put 2 pounds of beef in the pot. I browned it (with salt & pepper) on each side.
This recipe didn't call for any potatoes or carrots, but no pot roast is complete without them IMHO. So I put 6 medium potatoes, scrubbed and diced into the bottom of the crockpot.
I layered 8 small carrots, peeled & chunked, on top of the potatoes.
Then I put the browned roast on the veggies.
My pot still had all the soft onion & garlic in it. I added two cans of diced tomatoes.
I poured the onion/garlic/tomato mixture on top of the roast and added 2 cups of chicken broth.
It smelled pretty awesome cooking for about 7 hours. The recipe says 2 pounds will cook in 3.5 hours, but I always give pot roast a longer cooking time.
