This recipe is for GF Chocolate Chip Cookies:
8 T butter
3/4 cup granulated sugar
2 extra-large eggs
1 T pure vanilla extract
2 1/4 cups all purpose gluten-free flour
1 1/4 t. xantham gum (if your all-purpose flour didn't have it)
1/2 teaspoon kosher salt
1 t. baking soda
12 oz. semi-sweet chocolate chips
I made a half recipe to see how it worked.
Butter alternative and sugar, blend until fluffy |
Add eggs, one at a time, and vanilla |
Add the flour, xantham, salt, & baking soda |
Dark chocolate chips (non-dairy) tossed with a Tablespoon of the dry ingredients |
Mix in the chocolate chips |
Drop dough 2 " apart on cookie sheets, refrigerate for 15 minutes |
Baked for 9 minutes. Watch for the edges to brown slightly, not the tops. |
Another load on the cookie sheet, but I didn't refrigerate these ones |
These also cooked up nicely. They are quite soft when you remove them from the oven, but ten minutes on the cooling rack hardens them up to an appropriate cookie textures. |
They are really tasty and my GF/DF daughter just loves them, too.
